Caramelised Onion Tart Tatin



An impressive recipe which is so simple to make with just a handful of ingredients! Use plant based butter and puff pastry to make this recipe totally vegan.


INGREDIENTS


4 brown onions, peeled and halved

50g butter

2 tbsp brown sugar

4 sprigs of fresh thyme

1 sprig of rosemary

1 tbsp balsamic vinegar

8 cloves of garlic

1 sheet of puff pastry


METHOD


1. Preheat the oven to 200C fan. Melt the butter in a non stick frying pan over a medium heat. Add the sugar, balsamic and a splash of water. Place the onion halves cut side down and scatter over the garlic cloves. Season well with salt and pepper. Place a lid over the pan and steam the onions for 10 minutes until starting to soften.

2. Remove the lid and bring the liquid to caramelise. Gently swirl the pan to evenly brown and stop sticking. Place the pastry over the top of the onions, using a spoon to tuck it around the edges – careful as the caramel is hot!

3. Place the pan in the oven and bake for 25 minutes until the pastry is puffed up, crispy and golden. Leave to stand for a few minutes before placing a large serving plate over the pan and flipping over. Serve with a leafy green salad.
